RECIPE : Perfect Omelette

I love omelettes, they're just so versatile! You can make them sweet or savory and stuff them filled with veggie cheesy goodness. Omelettes are notoriously tricky to make and one wrong move will have you turning your omelette into scrambled eggs so today I will be providing you with a few tips and tricks I've picked up along the way! Keep reading for the full recipe and tutorial!

WHAT YOU'LL NEED:
  • 3 eggs (2 for a lighter omelette)
  • 1 tbs butter
  • 1 tps water
  • salt
  • pepper
  • a NONSTICK skillet

PREPARATION:
  1. Heat up a medium sized NONSTICK skillet.
  2. Add butter and make sure the skillet is well coated including the edges of the skillet.
  3. In a clean mixing bowl break opened your eggs, season to taste and set aside.

HELPFUL HINTS:
- You can add a dribble of olive oil to the butter to keep it from burning and cooking away.
- Choose a skillet with a smooth nonstick surface and the least amount of abrasions possible, this is super super helpful!
- If you use more than 2 ingredients in your fillings, you should cover the omlette with a lid to make sure the filling is cooked and heated properly. Be careful not to add so many that your omelette is too heavy to slide around the skillet!

INSTRUCTIONS:
  1. By the time you finish your preparations your skillet should be nice and hot and coated in a good layer of melted butter. Add 1tps (use a tablespoon if you used 3 eggs instead of 2) of water to your mixing bowl.
  2. Using a whisk or fork vigorously whisk the egg and water mixture until it is combined and appears slightly bubbly around the edges.
  3. Pour your egg mixture into the skillet, if you skillet is the correct temperature the mixture will begin to cook and solidify very quickly. within roughly 30 seconds.
  4. After the mixture has cooked for a few seconds, it should stay together pretty well. Take a spatula or silicon scrapper and very gently trace it around the edges of the omelette to free it from the skillet and help prevent it from sticking. I like to pick the skillet up and lightly shake it to make sure the omelette is free and not sticking to the bottom of the skillet.
  5. Once your omelette has cooked enough that you can slide it around the pan without it sticking, add your choice of fillings to one half of the omlette. When the cheese begins to melt and the fillings are warm you are ready for the final hardest step.
  6. Position the skillet so the side of your omlette with the filling will leave the skillet first. Holding the skillet over your plate slowly tip the skillet downward at a 30 degree angle letting the omelette slide from the skillet, when you reach the half way point use your skillet to fold the half of the omelette with no filling on top of the other half creating the half moon shape.
